PIERRE-YVES COLIN-MOREY
Maison Pierre-Yves Colin-Morey in Chassagne-Montrachet, Burgundy, crafts exquisite Chardonnay wines. Established in 2005 by Pierre-Yves Colin and Catherine Morey, descendants of esteemed winemakers, the estate owns Premier Cru vineyards in Saint-Aubin and Chassagne-Montrachet, including Chatèniere, Champlots, Remilly, Chenevottes, and Caillerets. In addition, they selectively source grapes from renowned Grand Cru vineyards like Bâtard-Montrachet and Corton-Charlemagne.
With a focus on meticulous cellar practices, Pierre-Yves Colin-Morey opts for extended lees contact and barrel aging, eschewing batonnage. The wines are bottled without filtration, and fining is often omitted, resulting in authentic expressions that reflect the terroir and grape quality.
Nose: Medium to full bodied, not particularly fruity, more minerally, yet there is power and concentration.
Tongue: underlying white and yellow fruits, watering salinity and a never ending finish.
Pairing recommendation: pairs well with pasta, fatty fish (salmon, tuna, etc.), shellfish, mild cheeses and soft cheeses, smoked meat products. Serve at 12 - 14°C.
