2008 SEASON, A BOLD MIRACLE:
The 2008 viticultural year defied expectations with gray, overcast skies, a departure from the decade's abundantly sunny days. Spring and summer lacked light and warmth persistently. However, September brought a miraculous turn of events with beautiful weather. The harvest commenced on September 15, benefitting from perfect conditions of bright sunshine and consistent north to north-easterly winds. Grape picking extended to fully capitalize on this unexpected gift, revealing grapes with exceptional maturity and a remarkable balance.

 

Nose: Raspberries and wild strawberries burst forth, accompanied by powdery notes of iris and violet. Over time, greener nuances emerge, reminiscent of privet, angelica, and camphor tree.
Tongue: Initial sensations are tactile, full-bodied, and silky, gradually intensifying. The signature acidity of the vintage intertwines with the pinot noir's structure, pulsating at the heart of the wine. The persistent finish exudes scents of peonies and white pepper.
Pairing recommendation: Dom Pérignon, in collaboration with Alain Ducasse and Albert Arià, presents an ideal pairing of lightly coated cauliflower with black mole, inspired by Mexican cuisine's use of cocoa, grilled herbs, and spices. This combination offers a spicy, concentrated, rich, and captivating experience that complements the wine's depth, structure, and full-bodied elements.
