Description

The "sour fruits" played a significant role not only in the kitchen but also in leather production, where they were considered excellent tanning agents due to their high tannic acid content. In the cuisines of Lebanon, Syria, and Turkey, sumac berries are still widely used today. The dried berries are soaked in water for 10-20 minutes, squeezed, and usually added to dishes towards the end of the cooking time. Ground sumac berries are used for rubbing on meat or fish before cooking.
