Qvevris are Georgian clay vessels commonly referred to as amphorae. Bernhard Ott's qvevris range in size from 500 to 2000 liters and are used exclusively for vinifying Veltliner. Interventions are minimal: the grapes are destemmed and filled into the qvevris, where spontaneous fermentation occurs. Biological malolactic fermentation happens naturally, and the temperature self-regulates. Over six months, a complex and highly individual aroma spectrum develops, gradually unfolding over the years.

Description

Since 1889, the winery has remained in family hands, with Bernhard Ott taking the reins in 1995 as the fourth generation. At just 22 years old, he stepped into the estate with great ambition and a mind full of ideas. His main focus is on enhancing the finesse, richness, and elegance of Grüner Veltliner. Today, 90% of the 16-hectare vineyards are devoted to his beloved grape variety. Through his unwavering dedication, Ott has quickly risen from an insider's tip to become the shining star of the Austrian wine scene.

 

Nose: Notes of white flowers and honeydew melon, ripe yellow and white fruits. 
Tongue: Minerality and white pepper reveal new aromatic perspectives, elegant and layered, yet full-bodied and substantial. The body appears calm and soft, with low acidity. 
Pairing recommendation: A wine that pairs perfectly with savory dishes. Serve at 10 - 12°C.
