Albert Ménès' cod liver is meticulously hand-extracted from fish sourced in Icelandic waters, smoked over beechwood, and carefully canned. No oil is added, as it naturally releases during cooking. Each fishing year constitutes a unique vintage, as cod liver matures with time, much like wine.

Cod liver is a delicate, sophisticated appetizer. Enjoy it on crisp toasts, as an aperitif paired with asparagus tips, or atop a bean salad dressed with olive oil and lemon.

Wett preserves of fish, such as Cod, Mackerel, or Sardines, crafted in the traditional manner, improve with time. They are already good in the first year and even better in the following, as they become milder and more delicate due to maturing in the olive oil.
