Soupe de Poissons - Fish Soup from Brittany

Prepared with chunks of conger eel and whiting cooked in court bouillon and finely ground, this new Breton fish soup recipe is truly delicious. Cooked with small pieces of carrot, tomato paste, onion and a touch of spice, the fish soup is served hot with seaweed croutons and a spoonful of rouille sauce. A little grated cheese can also be added to suit individual tastes.

This fish soup will of course be delicious if you add mackerel fillets au naturel, and mussels au naturel, to make your fisherman's cotriade recipe. Reheat for a few minutes in a saucepan. You can garnish with grated Gruyère, seaweed croutons and rouille sauce.
