Sedani (Sedano = celery in Italian) is a short, tubular paste with a striking and slightly curved shape. The special durum wheat Matt is an ancient variety that has nothing to do with hybrid varieties for conventional pasta production. The intense grooves, the soft and gentle curves, the small size, the density: all the characteristics of this tubular shape contribute to its ability to embrace and highlight any type of sauce.
