Domaine Pierre-Yves Colin-Morey in Chassagne-Montrachet is among the most exciting producers in Burgundy today. The domaine cultivates both owned and leased parcels in select Premier Cru vineyards such as Chassagne-Montrachet Les Chenevottes, Caillerets, and Remilly, as well as in Saint-Aubin.
In the cellar, Pierre-Yves relies on natural fermentation, extended aging on the fine lees, no bâtonnage, and minimal filtration or fining. The result: complex, terroir-driven wines with remarkable elegance, depth, and aging potential.
Nose: Subtle fruit on the nose, with clear mineral nuances and impressive depth.
Tongue: On the palate, notes of white and yellow fruits are complemented by a mouthwatering salinity and precise acidity.
Pairing recommendation: A perfect match for creamy pasta dishes, salmon or tuna, shellfish, smoked fish or meats, and mild soft cheeses. Serve at 12 - 14°C.
