Made from carefully maintained sourdough, which is refreshed every four hours, the panettone impresses with its soft, airy centre, complex aroma and natural freshness – without any preservatives.

Pasticceria Calciano is a family-run pastry shop with around 40 years of tradition, based in Tricarico, Italy. Founded by the Calciano family and now run by brothers Ezio and Rocco Calciano, the company combines craftsmanship with regional roots. Calciano's philosophy is based on honest craftsmanship: all products – from panettone and colomba to biscuits and other specialities – are handmade without semi-finished products or preservatives. A special feature is the use of natural sourdough (lievito madre) with slow, gentle dough fermentation, resulting in light, aromatic and particularly well-tolerated baked goods.
