Legend has it that in the days of old, as wooden vessels carried raw coffee from India to Europe during the monsoon season, the beans absorbed the characteristics of the humid Hindi coastal region. The journey, taking nearly 6 months to sail around the Cape of Good Hope, subjected the coffee beans to constant humidity, resulting in remarkable transformations. Over time, the beans swelled, turned a pale golden color, and lost their acidity. This extraordinary, smooth cup of coffee was a revelation in Europe, offering a wholly unique experience. To this day, Monsooned Malabar remains a crucial component in the repertoire of specialty coffee roasters, often a "must-have" in their stock. However, its availability is limited due to the special treatment it undergoes.
