A pyramid of champagne glasses is ready on your table to welcome the star of the cocktail world: the White Bellini. This exquisite cocktail is packed with creamy fruit, juicy peach and velvety apricot, all based on white tea, of course. This tea is the most delicate of all, as only the youngest shoots are picked. They say all roads lead to Rome, in the case of Bellini, this well-travelled cocktail is an icon of the majestic city of Venice. Invented in the late 1940s by a certain Giuseppe Cipriani, then director of the renowned Harry's Bar, it is made with Prosecco and peach nectar, preferably of the white variety. Its pink-orange colour gives it a delightful sensuality and supposedly inspired its name, as a tribute to the famous Venetian painter Giovanni Bellini, who was particularly fond of these shades.
