Extended aging on the lees in the dark cellars allows each vintage to fully reveal itself – for the 2015 Vintage, this meticulous process took nearly ten years. An unusual year, 2015 was marked by mild conditions, drought, intense heat, and abundant sunshine. Harvest began early on September 7th: the Pinot Noir grapes were exceptional, while the Chardonnay, affected by the drought, required careful selection.
Nose: Initially restrained, with delicate roasted notes and cocoa, gradually unfolding into floral aromas of linden blossom, jasmine and peony. Subtle hints of anise, cardamom, orange zest and green papaya lend freshness and depth.
Palate: Silky yet vibrant. Ripe peach and nectarine intertwine with refined bitter nuances of citrus and gentian – harmonious, complex and lingering.
Pairing: Perfect with fine seafood such as caviar, crab or langoustine. Also pairs beautifully with delicately spiced meat dishes – pork, lamb or duck – and with exotic touches of kiwi, guava or green curry that highlight its elegant complexity.
Grape Varieties: 51% Pinot Noir / 49% Chardonnay
