COMINCIOLI
The Comincioli farm is situated in Puegnago, in the Valtenesi area on the western banks of Lake Garda, the magnificent Riviera along the Brescia side of the lake.
Production of their first pitted extra virgin olive oils, the “Denocciolati” had begun 20 years earlier, with the support of Luigi Veronelli. It was a very special anniversary for Comincioli, which was celebrated with a new project, inspired by a continuing pursuit of excellence: To create a new pitted extra virgin olive oil using their own oil mill and method, adopting a synergistic approach and exploiting our professionalism and expertise to select specific Italian varieties from different geographical areas and origins, respecting their criteria for high quality fruit and cultivation methods, with the scope of producing a great oil.
This decision led to the development of a unique blend, produced in limited quantities. A celebration of high-quality olive oil, cultivars, nature, and the environment.

Comincioli grows Casaliva, the autochthonous olive of Lake Garda, Raza, Favaröl, Mitria, Regina del Garda, Cornaröl, Drizzar, Trepp and Gargnà. There is also Leccino, a variety present since the beginning of the 20th century, and not autochthonous ones like Leccio del Corno, Frantoio, Pendolino, Moraiolo. The olives trees are cultivated using the multiple cone pyramid vase or cone vase training system, on grassy terrain. They are pruned each year to guarantee the health of the plants and enhance production.
In 2001 a clear choice was made, adopting a specific philosophy aimed to enhance the beneficial, sensory and qualitative aspects characterising extra virgin olive oil to the maximum. The innovative extraction process introduced by Comincioli at the olive mill allows us not only to separate the olives from the stones in order to obtain oil from the pulp of the olives alone, but also to prevent any air contact. This permits Comincioli to completely protect the oil from oxidation, which is detrimental to quality and the conservation of the oil over time
