The mackerel come from extractive and sustainable fishing in the Cantabrian Sea and were caught between February and May, the season when the quality and fat content of the specimens are at their best.
Preserves of fish in olive oil, such as White Tuna, Mackerel, or Sardines, crafted in the traditional manner, improve with time. They are already good in the first year and even better in the following, as they become milder and more delicate due to maturing in the olive oil. That's why we specify the vintage year in our limited edition preserves.

Storage: 6 years at room temperature. Drain the oil before consumption. After opening, store in the refrigerator and consume within 24 hours.
