After Absinthe was initially banned in France in 1915, it is now enjoying great popularity again. In copper stills, herbs such as lemon balm and hops and especially green anise and wormwood are distilled together with a neutral brandy. Only the heart of this distillation meets the strict quality standards for Pernod Absinthe.
