This Pinot Noir comes from a south-eastern site in Hallau called "Chölle". The gnarled vines, which are over 60 years old, are deeply rooted in a heavy, chalky loam soil and produce only small yields. The grapes ferment/ferment with their wild yeasts for about a month in wooden vats. The wine is aged for 12-18 months in 228l Burgundy pieces, depending on the vintage, and is bottled unfiltered.
