The grapes from the Steinhaus as the base wine for the sparkling wine are matured in large, neutral acacia wood barrels. After the second fermentation, the raw sparkling wine is left on the yeast for longer to achieve a subtle creaminess and fine mousseux. A sparkling wine that unifies variety, site, soil and wine.
